Chocolate Mayonnaise Cupcakes with Chocolate Buttercream Frosting

At first I wasn't so sure I was going to like these cupcakes.  Who's ever heard of mayonnaise cupcakes?  Well, not me!  

So what did I do? I very reluctantly gave in and made these at my husbands request last night, and I have to admit that I was completely surprised by how they turned out.  

They were moist, had a great chocolate flavor and they turned out great!  My family LOVED them!  

Have you ever made a box recipe and had your cupcakes fall apart while people were eating them?  Yeah, I really hate that!  Good news.... these cupcakes stayed perfectly together until the very last bite. 

Good job honey!  Now we can share our new favorite cupcakes with the world, or at least people reading our blog :-) 

Chocolate Mayonnaise Cupcakes
Ingredients
2 cups flour
2/3 cups unsweetened cocoa
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
3 eggs
1 2/3 cups sugar
1 teaspoon vanilla
1 cup Hellmann's or Best Foods Real Mayonnaise
1 1/3 cup water   

Preheat oven to 350°.    

Put your cupcake papers in the cupcake holders; set aside

* Note, if you are making a cake grease and flour the bottoms of 2 9x1 1/2 inch round cake pans 

In a medium bowl, combine flour, cocoa, baking soda and baking powder; set aside

In large bowl with mixer at high speed, beat eggs, sugar and vanilla, scraping bowl occasionally, 3 minutes or until smooth and creamy 

Reduce speed to low; beat in mayonnaise until blended

Add flour mixture in 4 additions alternately with water, beginning and ending with flour mixture

Pour into cupcake paper holders

Bake  15-20 minutes or until cupcake springs back when touched lightly in center

* If making a cake using round pans adjust baking time to between 30-35 minutes or until cake springs back when touched lightly in center.  

Cool completely before frosting   


One-Bowl Chocolate Buttercream Frosting
Ingredients  
1 stick of butter, softened
2 2/3 cups powdered sugar
1/2 cup cocoa
1/3 cup milk (I used vanilla soy milk for the extra flavor)
1 teaspoon vanilla extract

In a small mixer bowl, beat butter

Blend in powdered sugar and cocoa alternately with milk, beating well after each addition until smooth and of spreading consistency

Blend in vanilla

Add additional milk, if needed    

Enjoy!
